Title: Spring Fried Rice with Wild Vegetables Www.macrobiotics.c

Yield: 4 Servings

1/2cBurdock, shaved or cut into
  Very thin matchsticks
2tbSesame oil
3cCooked brown rice
  Soy sauce
1/2cChives, finely chopped
1/2cDandelions, par-boiled 1
  Minute, finely chopped

Heat the sesame oil in a skillet. Add the burdock and saute 1-2 min. Add the rice, mix, and add several drops of soy sauce. Cover, reduce the flame to low, and cook until the rice is warm. Stir ccasionally to cook evenly. Add the chives and dandelions. Stir and cook 1-2 min. Correct seasoning with soy sauce. Cover and cook for another minute or so. Mix and place in a serving dish.
